Very nice blog! One recipe that I make for my outdoor picnics is a grilled chicken with basil pesto sauce. I first grill chicken breasts in a cast iron skilled until thoroughly cooked on both sides. Next I make a soy and dairy free pesto sauce. The ingredients for the sauce are as follows: combine 2 to 3 packages of fresh basil with 1/8 of a cup of olive oil, a handful of cashews or pignoli nuts, and 1 package of Daiya non soy and dairy cheese. Put all of the ingredients together in a blender and mix for one minute. You can heat this sauce for 2 minutes on a low flame and spread on chicken breasts. You can either use a French or Italian bread for this recipe. Enjoy!
